Dry noodles really well. I put them on a clean teatowel and then pat them dry. Pull out spinach and squeeze out whatever moisture you can. Mix spinach, cheeses, s&p, nutmeg with egg. Spread about a 1/3 cup mixture on each noodle. Roll up and stand up in a greased casserole dish, about 8" round or square. Pour sauce over noodles, cover.

Bake, covered, in 350'F oven 25 to 30 minutes. Uncover, sprinkle with remaining *cheese, serve.

I sometimes use a mixture of parmesan and mozzarela. And I sometimes lay the rolls on their side.
